  14. of consistency but consistency without character
  15. is just the absence of failure, thats not spectacular
  16. thats safe and safety doesnt have a terroir
  17. safety has no specific slope, no particular star
  18. light in a particular harvest just the average
  19. of a thousand unremarkable passages
  20. through unremarkable seasons and you can taste it
  21. on the palette, smooth, balanced, wasted

  24. knows the vintage by the weight, the nose, the table
  25. pf contents that the liquid writes on contact with the air

  27. of being read, knows the hand that made it

  29. pressure, its uncertainty, its particular genius

  38. of an influence metabolized and sweated out and gone
  39. except in the sediment the language built upon
  40. the sommelier trains for years before pronouncing anything
  41. because pronouncing without earning is just mumbling
  42. with confidence and the craft rewards the patient taster
  43. not the first impression the sustained encounter with the structure
  44. rewards the one who comes back for the third sip
  45. and the fourth the finish is where the real grip
  46. of the thing reveals itself the aftertaste is the thesis
  47. the first impression is just the preamble, the real piece is
  48. what remains when the obvious has faded
  49. when the fruit note that seduced you has vacated
  50. the palate and the tannin structures what your left with
  51. the skeleton of what it is stripped of its gift wrap
  52. and I am a tannin structure emcee
  53. i am what remains when the seduction leaves
  54. the palate dry and asking for the architecture
  55. of the actual and I am the lecture
  56. underneath the entertainment both are real
  57. but only one of them is what you feel
  58. three hours later when your not in the room
  59. thinking about it thats the sommeliers proof

  61. theres a vintage I return to when I need to calibrate
  62. an album cut from a year of particular weight
  63. when the producer and the emcee were both testing
  64. against something real and the compression
  65. of that reality into the bar is audible
  66. if your listening correctly, if your palates capable
  67. of reading duress in the syllable and it is
  68. once youve trained for it the sommeliers business
  69. is exactly that reading the duress
  70. the beauty, the confusion, the digress
  71. ion from the plan in the finished work
  72. reading the human in the art, the quirk
  73. of consciousness that makes it specific
  74. and specific is the sommeliers aesthetic
